Kojic Acid

• Pathogenic activity: Disrupts liver enzymatic activity related to methanol (wood alcohol) clearance.

Found in potatoes and coffee. Blocks the detoxification of wood alcohol, leading to pancreatic damage. Present in fermented products, instant coffee, potatoes, and cosmetics containing kojic acid.

Health issues: Pancreatic damage, insulin resistance, diabetes, and impaired detoxification.
